02/6Soybean curry

Soybean curry

To make this dish, soak 1 cup of soybean overnight in 3-4 cups of water. When starting to make, put a pressure cooker over medium flame and heat 2-3 tbsp of mustard oil in it. When the oil is hot enough, add 2 pinches of hing, 1 tsp cumin seeds, and 2 dry red chillies in it. Fry for a few seconds and then add 1-2 finely chopped onions along with 2-4 garlic cloves. Saute until the raw smell of garlic goes away. Next, add 3-4 chopped tomatoes along with salt to taste, 1/2 tsp turmeric, 1/2 tsp red chilli powder, and 1 tbsp curry powder. Mix well and cook for 2-3 minutes. Then, add soaked soybean to it and stir well. After cooking for 2 minutes and then add enough 2 cups of water to it. Pressure cook for 7-8 whistles and when done, turn off the flame. Let the pressure release on its own and add the chopped coriander leaves to it. When the beans are cooked, mix it well and using a masher, mash the soybeans a little to make them thicker. Add a butter cube in it and mix well once again. Serve with rice or chapati, as you like.

This soybean recipe is made just like dry soybean, but the only difference is that they are cooked using a lot of spices and with onion & tomato. To make this dish, add 1 onion to the hot oil in the kadhai and let it saute. Once sauteed, add 2 chopped tomatoes along with 1/2 tsp each of turmeric, red chilli powder, chaat masala, garam masala powder, coriander powder, and cumin powder. Cook until the tomatoes have been cooked well and then add the pressure cooked soybeans to it.
